  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 1/4 cups milk
  • 5 egg whites
  • 1/2 cup rainbow sprinkles

For the Frosting:

  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 to 4 tablespoons milk
  • Rainbow sprinkles for decorating

Instructions

  1. Preheat the oven to 350 degrees and line a muffin pan with liners.
  2. In a medium bowl, whisk together the gluten free flour, baking powder, and salt. Set aside.
  3. In a separate bowl, beat together the vegetable oil and sugar until smooth.
  4. Add the vanilla extract and milk and mix to combine.

  10. While the cupcakes are cooling, prepare the frosting by beating together the butter, vanilla, powdered sugar and 2 tablespoons of milk. Add more milk, if needed, until the desired consistency is reached.
  11. Pipe the frosting on top of the cupcakes and immediately decorate with rainbow sprinkles while the icing is still soft.
