Start by combining the water and butter in a small saucepan. Cook the ingredients over medium high heat until the water begins to boil and the butter melts.

After that, add the salt, paprika, cayenne pepper, and gluten free flour to the pot. Continue cooking the ingredients, stirring constantly, until a thick dough begins to form.

After the dough comes together, add the shredded cheese to the pot. Continue stirring until the cheese is fully mixed into the dough and melted.

Next, transfer the dough out of the hot and and into a bowl. Then, you can add your eggs to the bowl one at a time, beating between each addition.

When the eggs are fully mixed into the dough, use a small cookie scoop or tablespoon to scoop out balls of dough. Place them on a parchment paper lined baking sheet, leaving at least one inch of space around each dough ball to give them room to puff up.
To add even more flavor to your cheese puffs, you can add a sprinkling of shredded cheese to the top of each puff before baking if you want!
When your puffs are ready, place them in the oven to bake for 20 to 25 minutes, until the cheese puffs are golden brown.
